It's about time I share with you my Mediterranean Tortilla Pizza recipe! These veggie-packed single serve pizzas are a quick and easy option for lunch or dinner. They are perfect for days when the thought of cooking a full-fledged meal is too much, or when you’re alone and cooking for one.


They're also mom and kid-approved! If you have some time, try engaging your kids in the kitchen by having them chop veggies, grate cheese, measure the sauce, or build their own pizzas with their favorite toppings.

Recipe for Mediterranean Tortilla Pizzas


Servings: 4 servings

Total Time: 30 minutes


Ingredients:

  • 4 x 12-inch tortilla wraps, whole wheat or higher fiber

  • 1/2 cup of your favorite marinara sauce (or pasta sauce or pesto)

  • 1 zucchini, chopped

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 1 cup mushrooms, chopped

  • 1 tbsp olive oil

  • Pinch of salt and pepper

  • 1 small tomato, chopped

  • 1/4 cup marinated artichokes, chopped

  • 1/4 cup black olives, pitted and halved

  • 1/2 cup mozzarella or feta cheese, shredded or crumbled

  • Fresh parsley or basil, chopped (for serving)


Method:

  1. Preheat and prep: Preheat your oven to 425 degrees Fahrenheit. In a large bowl, toss the chopped zucchini, onion, bell pepper and mushrooms with olive oil, salt, and pepper until evenly coated. Spread them out on a parchment paper-lined baking sheet, ensuring not to overcrowd the pan (use two baking sheets if necessary). Roast the vegetables in a preheated oven for about 10 minutes or until they develop a light golden brown color.

  2. Build your pizzas: While the vegetables are roasting, place the tortilla wraps on pizza pans or baking sheets. Spread an even layer of marinara sauce over each tortilla. Then, top them with roasted vegetables, chopped tomatoes, marinated artichokes, black olives, and cheese.

  3. Bake your pizzas: Once assembled, bake the tortilla pizzas in the oven for 10-15 minutes or until the edges of the tortillas are golden brown, and the cheese has melted.

  4. Serve and enjoy: Remove the pizzas from the oven and sprinkle with freshly chopped parsley and/or basil. Slice them into wedges and serve hot.


Tips and variations:

Make sure to chop your vegetables into uniform sizes so that they cook evenly.


To avoid soggy tortillas, avoid adding too many toppings on your pizzas OR try crisping up the tortillas by placing them in the oven for a few minutes without the toppings, first.


For an extra boost of protein, consider adding leftover shredded chicken or kidney beans to your tortilla pizzas.


Don’t be afraid to get creative with your toppings! Experiment with different vegetables based on what you have on hand, such as asparagus, broccoli, or leafy greens like spinach or kale. The possibilities are endless, and the result is always a delicious and nutritious meal.
