Tomato Nectarine Salad

Fresh summer tomatoes, sweet ripe nectarines, shallots, and fresh basil marinate in a simple honey balsamic vinaigrette to create the perfect summer salad!



Earlier this summer, we visited my family in Ottawa. On our last day, we had the pleasure of spending time at my aunt and uncle's. My aunt loves to cook and host her guests, so we ended up having a delicious meal in the backyard! BBQ chicken, potato salad, garden salad... and an amazing tomato and nectarine salad. When I got back home, I just had to recreate it!


This salad is fresh, lightly sweet, and surprisingly comes together in just a few minutes! It’s the perfect summer side dish to wow your guests (we definitely were!), and will pair perfectly with any grilled protein.


Now, let's talk nutrition.


Whether you pick red, orange, green or yellow tomatoes for this salad, this fruit packs disease-fighting antioxidants like lycopene - which has been linked to a reduced risk of heart disease and certain types of cancers.


On the other hand, both tomatoes and nectarines are a great way to get a boost of Vitamin C, Vitamin A and potassium.


It's also no secret that a diet rich in fruits and vegetables is linked to a wealth of health benefits such as a reduced risk of chronic disease, lower blood cholesterol, better blood glucose control, better digestion and gut health, as well as a healthy weight for age.

Tomato and Nectarine Salad Recipe


Servings: Makes 4 servings

Total time: 5 minutes


Ingredients:

3 ripe tomatoes, cut into wedges

3 ripe nectarines, pitted, cut into wedges

1 shallot, thinly sliced

1/4 cup olive oil

1-2 tbsp. balsamic vinegar

1 tbsp. honey

Salt and pepper, to taste

1/4 cup fresh basil, chiffonade


Method:

  1. In a large shallow serving bowl, arrange tomato wedges, nectarine wedges and sliced shallots. Season with salt and pepper.

  2. In another small mixing bowl, combine balsamic vinegar, honey, and olive oil. Mix until emulsified. Pour over tomatoes and nectarines. Toss gently.

  3. Top with basil and serve immediately.
